Two days a week I work from home for my own little company Carrie Can. For you who hadn’t had the joy of working for their own yet, this basically means even less time in a day. However I always make sure that at lunch time I get a hearty and healthy meal to keep me going for the rest of the day.
I thought it might be fun to share some of my lunch recipes. So today we’re starting off with what’s in my tummy right now. This Lentil Pear Salad is inspired by a recipe from my grocery store and what I had left in my fridge.
Lentil Pear Salade
– 1 can of brown lentils
– 1 can of chick peas
– 200g mozzarella
– 1 teaspoon dried cumin
– 1 teaspoon dried coriander
– 1/2 teaspoon harissa
– 3 small ripe pears
– small bunch of parsley
Rinse the lentils and peas and let drain in a colander. Meanwhile peel the pears and cut them in little dices. Dice the mozzarella.
Ground the coriander and cumin in a pestle and mortar (you can already use pre-grounded but I just love the way it smells if you do it yourself. If you’re not sure how, check out this video tutorial)
Combine all the ingredients except the parsley in a large bowl. Mix by hand with a spoon. Chop the parsley and put it on top.
Sit down and eat!
